Glazed Seitan “Ribs” – perfect for BBQ Season

It’s BBQ season! As a vegan, especially in the beginning, it can be quite difficult to find cruelty-free alternatives to this meat-fest. Luckily Joel is very creative and started experimenting with seitan and different marinates. This here came out from his experiments and I am telling you – it’s juicy, chewy, smoky! All you will ever need for your BBQ and all of that without hurting anyone!



  • 1 ½ cup vital wheat gluten
  • ¼ cup nutritional yeast
  • ½ tsp thyme
  • ½ onion finely chopped
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 cup beef-flavoured vegan broth
  • 2 tbsp soy sauce
  • 1 tsp liquid smoke
  • 1 ½ cup BBQ sauce



Preheat your oven to 375 F and grease a baking dish with a bit of olive oil. Combine gluten, yeast, thyme, garlic powder, and black pepper in a large mixing bowl before adding in your chopped onion.

Heat a saucepan on medium-high heat and get your vegan beef broth to a boil. Add in liquid smoke and soy sauce and stir for 30 seconds. Turn off the heat and let it cool down for a few minutes. Add the broth to the gluten mixtures and stir it well with a wooden spoon.

When the liquid is all absorbed by the flour, you can knead the dough by hand for 10-15 minutes. Once it reached the consistency you want, spread it over your baking dish and bake uncovered for 20 minutes. Cut your seitan loaf into the size that you want (ribs, cubes, etc.) and marinate it in the BBQ sauce for at least 30 minutes (the longer the better). Once this is done, all that is left is to grill it and enjoy!
