When I was young we often ate goulash, but the traditional version is sadly with meat. I was 13 when I turned vegetarian and my dad had to re-think some of his cuisine. He wonderfully adapted and was creative in finding new ways to eat old classics, making them even better – like this yummy vegan soy protein goulash here.
Ingredients (for 4-6 persons)
- 200g Soy Protein
- 2 Onions
- 1 Garlic
- 2 Red Bell Pepper
- Thyme, Oregano, Paprika, Salt, Pepper
- Dry Red Wine or Lemon
- 2 cups of vegetable broth
- 1 Can diced Tomatoes (around 400g)
Cook up the soy protein in some vegetable broth. Strain and then drain in a towel, keep the vegetable broth that you stained.
Cut the onion and the garlic and fry it in some olive oil. Then cut the bell pepper and add to translucent onions, Fry on high temperature. After 2-3 minutes, add the drained soy protein. Then add once again the vegetable broth and finally the tomatoes. Add the herbs and spices to your taste and let simmer 10-15 minutes on low temperature. Serve with Fettucine or any other pasta you like!
