When Joël first came up with the (in my opinion very American) idea to make pizzas with pretzel dough, my German pride was certainly hurt a little – but hey, “stay open to new things!” I told myself and it was sooo worth it. This mix of cheeze, pretzel dough and smoked tofu with caramelized onions is just mouthwatering perfect. Make them small for some party or potluck fun or big for a hearty dinner.
- 2 cups flour
- 1 tsp instant yeast
- ½ tsp salt
- 1 tbsp olive oil
- 1 + 3 cup water
- 2 tbsp baking soda
- ¼ cup vegan margarine
- 1 garlic clove (pressed or finely chopped)
- ½ cup flour ¼ tsp curry powder (or turmeric if you prefer)
- ½ cup nutritional yeast
- A few drops of liquid smoke (optional)
- Salt and pepper to taste
- 2/3 cup water
- 1 yellow onion (chopped)
- ¼ tsp salt
- 1 tsp maple syrup
- Smoked tofu (cut in cubes)
Start by making the dough! Put the flour, yeast and salt in a large bowl and mix for about 30 seconds. Then mix the olive oil into 1 cup of water and slowly add the liquid to your bowl while constantly stirring.
Once everything is mixed, start kneading the dough with your hands for a few minutes. You may need to add more flour or water if it is too sticky or dry.
Form the dough into a ball and let it rest in a greased bowl covered with a wet towel for at least 15 minutes.
Meanwhile, start preparing the sauce. Warm-up a saucepan over low-medium heat and let the margarine melt. Add in the garlic and let cook for 2 minutes before throwing in salt, pepper and curry powder. Let everything cook for a few seconds while constantly whisking.
Add the flour and nutritional yeast to your saucepan and keep whisking. Once everything is mixed, keep whisking and slowly pour in the water. You might need a different amount than we used, simply adjust it to your desired thickness. Just remember that it will run off the dough if it is not thick enough.
For the topping, start by warming up some oil in a pan over medium heat. Once the pan is warm, throw in the chopped onion, salt and maple syrup and lower the heat to low. Let cook for 5 to 10 minutes stirring occasionally. Preheat your oven to 425F.
While the onions are cooking, it’s time to finish the pretzel crust! Start by getting 3 cups of water to boil in a pot and roll out your dough in the shape that you want (we also love making a bunch of bite-sized mini pizza with this crust). Add baking soda to the boiling water and then let your rolled dough sit in the baking soda bath for 1 minute before scooping it back out.
Once all your dough has soaked, top it with cheese, onions and smoked tofu and bake for 15 to 20 minutes. Let it cool down for 5 minutes before eating so that the cheese can set a bit.
