Cheezy Quinoa-Cashew Wraps

These wonderful wraps contain all you need – crunchy quinoa, soft avocado, nutritious broccoli and zucchini. Topped with raw tomatoes and kale they are true health bombs.





  • 1 cup quinoa
  • 1 ½ cup broccoli (chopped)
  • 1 zucchini (chopped)
  • 1 onion (chopped)
  • 1-2 tomatoes (chopped)
  • Kale
  • 4 wraps

Cashew cheese sauce:

  • ½ cup cashews (soaked overnight)
  • ½ cup plant-based milk
  • ¼ cup nutritional yeast
  • 1 tbsp miso
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp mustard powder
  • Pepper to taste



Start by putting 2 cups of water into a medium-size bowl. Add the quinoa and bring to a boil. Cover the pot and lower the heat and let simmer for 10-15 minutes.

While the quinoa is cooking, make the cheese sauce. Simply add all the ingredients to a blender and mix on high until no cashew crumbs are left.

Warm-up some olive oil in a big pan or a wok over medium-high heat and throw in the onions. Cook for 2 minutes before adding the broccoli and zucchini. Cook for 10 to 15 minutes or until the broccoli becomes soft and add the cooked quinoa and cheese sauce to the pan. 

Stir well and let it cook for a little bit longer just so that the cheese sauce can get warmer and serve on a wrap with tomato, kale or any other topping of your choice.
