Pizza Pockets

Need something fun for your next party or kids event? We gotcha! These are easy to make, filled with goodness and will sure be a hit on any party. Made with love and homemade Seitan, they are something for everyone.

Ingredients 

Tomato Sauce (of course you can also be lazy and just buy a pre-made one)

  • 1 can diced tomatoes
  • 4 tbsp tomato paste
  • 1 yellow onion (chopped)
  • 2 garlic cloves (chopped or pressed)
  • ¼ tsp each dried oregano, basil and thyme
  • A few pinches of cayenne pepper (optional)
  • Salt and pepper to taste

Dough 

  • 3 cups (375 g) all-purpose flour
  • 1¾ teaspoon instant fast-rise yeast
  • 1¼ teaspoon salt
  • 1 cup (240 ml) hot water
  • 3¾ teaspoon olive oil

Toppings

  • vegan cheese of your choice
  • vegan seitan pepperoni (homemade or store bought)
  • mushrooms

Recipe

Let’s start with the sauce! Warm up some oil over medium heat in a sauce pot. Throw in onions and garlic and cook for 5 minutes. Season with a bit of salt and add diced tomatoes and tomato paste. Throw in the spices and let simmer for 15 to 20 minutes.

In this time, you can make the dough. Place yeast, flour and salt in your blender and mix, then slowly add oil and water until you get a smooth dough. Put it aside and let it rise for 12-15 minutes. You can now preheat the oven to 450F.

Now you can get cutting your mushrooms and seitan, if not pre-cut. When you are done cutting, 15-20 minutes should be over, so taste the sauce and adjust the seasoning to your liking. Put it in a blender and mix until it becomes completely smooth.

When everything is ready, you can roll out the dough and cut squares out of it. Brush with a good amount of tomato sauce and top with mushrooms, seitan and vegan cheese. Then fold them like an envelop and push the borders a bit so they stick together. You can also make the connections smoother by brushing over with some water. If you would like the dough a bit crispier, brush with some olive oil before putting it in the oven. Bake for around 15 minutes and enjoy! But watch out, these pockets are hotter than a normal pizza ;-).
