Vegan Holiday Gingerbread Truffles


‘Tis the season to make truffles! Perfect if you are sick of Christmas cookies, need a fast, easy and delicious present or just because you like the taste of Christmas chocolate. These are made in no time and look and taste just amazing. Big plus: you only need 5 ingredients!



  • 1 and 3/4 of a cup dark vegan chocolate chips
  • 200ml rice cream
  • 1 cup amaranth
  • 1 tsp gingerbread spice
  • around 1/2 cup of cocoa powder for coating



Put a pot on the stove and heat it up, you can test with a drop of water if it’s hot enough (if the water is sizzling you can be sure it is). Add the amaranth and let it pop, like you would make popcorn. Removing the pot from the heat helps to not make it burn, you can move the amaranth around a bit in the pot too. When everything is popped, add the cream and bring to a boil. Stir in the chocolate and the gingerbread spices. Put the whole mixture in the fridge and let cool down for an hour.

Now you can put some cocoa powder in a bowl and take small portions of the chocolate mix with your hands. Roll it to balls and give it a final touch by rolling it in the cocoa powder.
