Vegan French Onion Soup

Fall season – soup season! And we definitely looove soups. This one here is healthy, savory and so warming from the inside. Perfect for rainy fall weather.




  • 4 onions (chopped)
  • 3 garlic cloves (chopped or pressed)
  • 1 tsp olive oil
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp sugar
  • 8 cups vegetable broth
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 2 bay leaves
  • 4 slices of bread
  • Your favorite vegan cheese


The first step is to caramelize the onions. Warm up the oil inside of a medium soup pot and throw in the onions and garlic. Add in salt, pepper and sugar and let cook on medium low heat for 45 minutes.

Once your onions are ready, add the broth to the pot and raise the heat to high to bring it to a boil. Once it is boiling, add in all the spices. Cover the pot and reduce to medium-low heat. Let cook for 15 minutes. Remove bay leaves and adjust seasoning to your liking.

Once the soup is ready, toast the slices of bread and cut off the crusts and cut them into small bites. Pour the soup into 4 oven-safe bowls and separate the pieces of crusts evenly amongst the portions. Top each bowl with a slice of bread and some cheese and broil in the oven until the cheese melts. Let cool down for 10 minutes before serving.
