I have to say, nothing beats the German (Swabian) cinnamon rolls my grandma always made. I was asking my aunt to send me the recipe, but because of the time difference I could not get it the night I wanted to make cinnamon rolls, as she was already sleeping. Impatient as I am, I tried it on my own. This is the result! They are really good, but I will try and veganize my grandmas recipe and upload it too. So stay tuned on my cinnamon roll trip!
Ingredients (makes 12-14)
For the rolls:
- 325 g flour
- 7 g instant yeast (or 21 g fresh yeast)
- 1/2 tsp salt
- 50 g sugar
- 1 pack vanilla sugar (~ 9 g)
- egg replacer of your choice that equals around 1 egg
- 1/2 cup warm milk
- 50 g vegan margarine or butter
- 1 tsp cinnamon
For the icing:
- around 100 g icing sugar
- lemon juice
Prepare the yeast like indicated, then mix it with 1 tsp sugar, 1 tsp flour and a bit of warm milk. Set aside for 10-15 mins in a warm and wind shield spot. Put the flour with the egg replacer, sugar, vanilla sugar and salt in a bowl and mix. Now add the yeast mix. Heat the rest of the milk up again a bit (not boiling!) and put the margarine or butter in the warm milk. Add this to the mix as well. Now you have to knead the dough until it is soft and smooth. Cover the bowl with a towel and let the dough rise for about an hour (check if the volume doubled).
Preheat the oven to 400° F/200° C. When the dough is ready it’s time to roll it. After rolling it mix some butter with cinnamon and a tiny bit of sugar. Spread evenly on the dough and cut in stripes. Then roll up the stripes. Put them on a baking sheet and bake for about 15 minutes.
When they are ready, take them out, let them cool down a bit and then put the icing. For the icing you have to mix icing sugar and lemon juice until it has a liquid and sticky consistency. Spread on top of the rolls. Enjoy!
