Vegan Banana Chocolate Muffins

Mhh one of my faves! Muffins are already genius, I love them so much. But then the soft combination of banana with sweet melting chocolate. Awesome!

Ingredients (makes 10-15 muffins)

  • 2 ripe bananas
  • 1/2 cup canola oil
  • 1/2 cup almond milk
  • 1/2 tsp vanilla extract
  • 1 1/2 cup flour
  • 1/2 cup brown sugar (or more to taste)
  • 1 tsp cinnamon
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt
  • 2/3 cup chocolate chips

Recipe

Preheat the oven to 350F and prepare your muffin cups. In a small mixing bowl, use a fork to mash the bananas and mix it with the oil, almond milk and vanilla extract. In a bigger bowl, combine the rest of the ingredients except the chocolate. Pour the banana mixture into the flour and mix until it forms a dough. Add in the chocolate chips and mix once more. Separate the dough evenly into your muffin cups and bake for 35 minutes.
