Vegan Chocolate Almond Cookies

Sweet dark chocolate with crunchy almonds, ready within no time and delicious AF! 😉 This recipe will make your mouth water and satisfy your sweet tooth instantly.

Ingredients (Makes around 15 cookies)

Dry:

  • 1 cup ground almonds
  • 1 cup flour
  • ¾ cup rolled oats
  • ¼ cup sugar
  • 1/3 cup cocoa powder

Wet:

  • ½ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 2 tbsp coconut oil
  • A splash of vanilla extract
  • ¾ cup dark chocolate chips

 

Mix all of the dry ingredients into a medium-sized mixing bowl. Incorporate all of the wet ingredients into the same bowl keeping the chocolate chips for last. If the mixture seems to dry, you can add more maple syrup or almond milk. Let the dough sit in the fridge for 20 minutes and preheat the oven to 350F.

Once 20 minutes have passed, take your dough out and form it into balls using one to 2 tablespoon of it for each cookie. Line them on an oven-safe plate with parchment paper and bake for 10 minutes. Allow them to cool for at least five minutes once they are ready and enjoy some (or all of them) while they are still fresh and melty!
