Spaghetti with Tomato-Olive Sauce and fresh Basil

Summer is almost over, but the tomatoes and basil in our garden are still growing. It smells so good! This inspired me to cook a nice tomato sauce with fresh Basil. As we had no ripe ones yet that day I took canned whole organic tomatoes. If you want to use your own tomatoes, you would simply have to cook them in boiling water for a bit and then transfer them to ice cold water. This makes them easy to peel and you can dice and cook them after.



  • 1 can of whole tomatoes
  • a handful of olives (I used mixed ones)
  • 1 bunch of basil
  • 100 ml of red wine
  • 1/2 onion
  • Salt and pepper to taste
  • Spaghetti (or any other pasta you’d like)



Start by cutting the onion in small cubes, fry it a bit in a sauce pan until it is translucent. Deglaze it with the red wine, then add the (can of) whole tomatoes, 3/4 of the bunch of basil, salt and pepper. Let cook covered for about 10 minutes. In this time you can cook your pasta. Finally add the olives and serve with more freshly chopped basil.
