Chickpea Mint Salad

This salad is perfect for warm summer days, when you want to eat something light, but filling and nutritious. Chickpeas contain a lot of protein (btw, who asked again where vegans get their proteins from?), red onions contain fiber and tomatoes vitamin c! Besides that, the mix tastes really fresh, with a hint of mint.


  • 1 can chickpeas
  • 1 tomato
  • half a red onion
  • a handful of fresh mint
  • 1/8 cup of nutritional yeast
  • half a lemon
  • 1/4 of a cup of olive oil
  • 1 garlic clove
  • salt and pepper to taste
  • curry powder to taste (optional)


Drain and rinse the chickpeas, cut the tomato and red onion in cubes and finely chop the fresh mint. Add everything to a bowl. Then mix in a separate bowl the nutritional yeast, lemon juice, olive oil and a garlic clove. To add the clove, it’s best to use a garlic press or chop it really fine. Add salt and pepper to taste. You can also add some curry powder, to give it an additional kick!
