Vegan Potato Croquettes aka homemade “Tater Tots”

Do you know that feeling when you’re suddenly craving something out of your childhood or teenage years, that you did not eat in ages? Well that feeling brought out this recipe here, potato croquettes. In Germany it is often served as a side of meat, but it is delicious on its own or with a nice vegan Burger etc, the possibilities here are endless! The recipe is super easy and cheap, but watch out, they are suuuper filling!

Ingredients

For the potato dough

  • 3-5 medium sized potatoes
  • 1 teaspoon salt
  • 2/4 of a cup of flour
  • 1/2 cup of plant-based milk
  • nutmeg and parsley to taste

For the breading

  • 1/2 cup flour
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 cup of breadcrumbs
  • 1 cm depth of vegetable oil to fry

 

Recipe 

Cook the potatoes around 15 minutes, until they are soft enough to be mashed. Mash them and add salt, flour, nutmeg and parsley. Then add the milk and knead everything to a nice dough. It might seem very sticky, but no worries, here comes the trick!

Put flour on your cutting board and take little balls of potato dough to roll them in the right shape in the flour. When you shaped all of them, it is time to do the coating!

Start by heating up the oil for the frying later, then mix flour, garlic powder, milk and salt until you have a liquid dough. Dip the potato dough in and coat completely. Take out and coat with breadcrumbs. Now fry in the hot oil from both sides. And there it is, your super delicious potato side!
