Summer time – BBQ time! But what should we make with all those grilled goodies? This refreshing salad is a perfect side for skewers, vegan sausages, marinated tofu and whatever you feel like throwing on the grill (or in the pan ;-)).
Ingredients (for 2-4 persons)
- 1/2 cucumber
- 2 tomatoes
- 1/2 lime or lemon (personally I prefer lime)
- 1 clove of garlic
- a hand full of fresh coriander
- olive oil
- salt, nutritional yeast, pepper, curry powder
Cut the cucumber and tomatoes in cubes. Cut the coriander in small pieces. Take the lime or lemon and squeeze out the juice. Mix the lemon/lime juice with some olive oil. I usually put 50% olive oil and 50% lemon/lime juice, but you can put as much as you want. Put the garlic in a press and add to the oil mix. Add salt, nutritional yeast, pepper and curry powder to taste.
