Vegan Scrambled Tofu

One thing I found hard when I went vegan is to find ideas for breakfast. Like for example how to replace scrambled eggs. Little did I know that it is SO easy to replace with tofu.

Here’s the magic:


  • 200 g tofu 
  • 1/2 onion 
  • 1 tomato 
  • 1 garlic clove
  • 3 small mushrooms 
  • 1/4 cup unsweetened non-dairy milk of your choice
  • 3 tbsp nutritional yeast 
  • 1/2 tsp black salt 
  • turmeric for the color 
  • dried parsley for serving

Cut the onion, tomato, mushrooms and garlic clove. Scramble the tofu and mix with black salt right away. Fry the onions and the garlic first until the onions are translucent. Then add tomatoes and mushrooms. Season everything with salt and pepper to your taste.

Add the tofu and some turmeric, until the tofu gets a yellow color. The turmeric serves just for the color in this recipe. Cook for about 3 minutes, then add the non-dairy milk. Cook all of it, until the milk evaporates. Add then the yeast and cheese (if desired) and cook a bit more. If you only add yeast you can just mix everything, if you add cheese cook until it melted. Season with additional black salt, salt, pepper and serve with parsley.
